Palm Sugar 240g
This light brown sugar is made from the sap of the sugar palm tree. Hardened into blocks, it is used in many Thai dishes. Not to be confused with the Malaysian or Indonesian version (gula melaka or jaggery), this caramel like sugar is quite crumbly and very sweet, so use sparingly. Added to a curry it helps counteract the chilli heat. Palm Sugar is a must in Thai cooking which brings unique flavour to the food.
